Cauliflower and Basil Soup

Alkalising, Vegan, Gluten-free

Basil is a herb that is related to the mint family (Lamiaceae) and its leaves are hot and moist in the first to second degree.  This plant is used in herbal medicine to prepare the major organs for cleansing.  The leaves are also used to improve digestion through its pleasant taste (aromatic) and stimulate peristalsis of the digestive system (carminative). In this soup, it is paired with cauliflower, a moderately alkalizing vegetable, to support the body in the initial stages of a detoxification program.

 

Ingredients

  • 2 tbsp olive oil

  • 1 clove garlic, finely chopped

  • 1 brown onion, chopped

  • 3 spring onions, chopped

  • 2 stalks celery, chopped

  • 1 cauliflower, cored and chopped

  • 2 tbsp red miso paste

  • 1/2 tsp Himalayan salt and pepper, or to taste

  • 4 cups water

  • 1/4 cup fresh basil leaves

 

Method

In a large saucepan, fry the garlic and onions in olive oil.  Add the celery and cauliflower and stir-fry.  Add the miso paste, salt, pepper and water and cook over a medium heat until the cauliflower is tender.  Remove from the heat, and add the fresh basil.  Cool slightly and then blend into a smooth puree.
